Mexican Shredded Chicken

 
 

This is a fantastic idea for your meal prep!! Your next few evening meals will be so easy when you have this on hand!

It is just chicken thighs cooked in the crock pot, mexican style seasonings, with some onion and garlic. How easy is that? I use the fresh Kirkland organic boneless chicken thighs from COSTCO, they come in a three pack that can be separated, and each package is about 1 1/2 pounds. I put all three packages in the crock pot, this filled the pot about halfway and was the perfect amount for the meals I had planned!

INGREDIENTS -

4-5 pounds boneless organic chicken thighs
4 Tbsp chili powder
3 Tbsp cumin
2 tsp salt
1 1/2 tsp pepper
1 cup onion, diced
4 cloves garlic, minced

Everything goes in the crock pot on low for 6-8 hours. This is a forgiving recipe so no need to measure perfectly! Stir occasionally to shred up the chicken and mix the flavors together. I did not need any additional liquid, but keep an eye out for that, some chicken is leaner than others! If it seems dry, add a little chicken stock to the pot. When it is done, shred with a fork if it hasn’t already fallen apart.

Now let’s eat! I roasted some baby potatoes for the first meal, then served the chicken over the top of those along with a side salad. The next day was chicken enchiladas, and then the rest went into a freezer bag for a taco night the following week.

And then stiil this much left! This will go in the freezer for the next taco night in a couple of weeks.
