Oatmeal Breakfast Bake

I saw this idea on a facebook or instagram video, it looked so easy and tasty that I had to try it. Of course, one of those videos you wished you would have saved because now you can never find it again 🙄. I took a few guesses at the ingredient amounts and it came out just right, a very forgiving recipe, you can even make this without any measuring! 😂 If you are looking for a simple but healthy breakfast to make those mornings go a little smoother, give this recipe a try. Kids especially love it!

INGREDIENTS -

2-3 bananas (a great way to use overripe bananas!)
1 cup organic oatmeal (quick or regular)
1 cup oat milk or your choice of milk
1 cup of blueberries
1/2 tsp cinnamon

In a 9 x 9 baking dish, smash the bananas on the bottom to form the crust. I didn’t have any trouble with the bananas sticking, my heavy ceramic dish does well, but if you aren’t sure about your pan, maybe wipe a little oil on it before smashing the bananas for your crust.

Sprinkle the oatmeal evenly over the bananas, then drizzle the oat milk over the bananas and oatmeal so that everything is soaking in milk. Sprinkle the cinnamon on top and then add the blueberries.

Bake at 350 for 20 minutes. And that’s it!! Pretty easy right? I have baked this right after combining the ingredients, and have also prepped it the evening before and then placed in the oven to bake in the morning. Both worked just fine, and I love the idea of preparing everything the night before when there is a busy morning ahead!
