Healthy Frozen Fruit Pops

Happiness is a summer frozen fruit pop enjoyed by the grandkids, and it can also brings a lot of cheer to a grandma’s heart to see the smiles. These creamy, fruity treats are made with real ingredients and no fuss — perfect for keeping the kids happy and cooling off the grown-ups too. Whether it’s pineapple, strawberry, or your own favorite fruit blend, these pops taste like pure summer joy.

INGREDIENTS –

  • 4 cups frozen fruit (my favorite was pineapple, and then strawberry)

  • 1/3 cup real maple syrup

  • 1 cup canned full fat coconut milk (stir before using)

It starts with four cups of frozen fruit. You can cut up the fruit and freeze on a sheet pan, or purchase frozen fruit. I have used pineapple and strawberries and both were good. I also tried mango but something about the combination of mango and coconut just didn’t do it for me.

Once the fruit is frozen put four cups of fruit in a blender and blend until it is a little “slushy”. Add one cup of coconut milk (the kind in the can with the fat stirred in) and 1/3 cup real maple syrup and blend until smooth.

Fill popsicle molds, or pour the ingredients into a loaf pan for a scoopable sherbet, and freeze for about 3 hours.

It ends up being like a creamy sherbet, and of course very delicious. You could have fun and experiment with different fruit also!
