Pork Chili Verde

Oh the joy of coming home to an aroma of a good meal simmering in the crock pot! Here is an easy and healthy one to try this week. It’s also a great recipe to double and set aside half in a bag to go in the freezer for one of those days!

INGREDIENTS -

4 cups diced pork, about 1 - 2 inch cubes
1 cup diced onion
2 cups diced roasted green chilies
2 cloves garlic, minced
1/4 cup lightly chopped cilantro
1 cup beef broth
1 tsp each salt & pepper
1 Tbsp cumin
Toppings for serving - cilantro
Riced cauliflower to serve over, or not!

Place all of the ingredients into the crock pot on low, cook for a minimum of 4 hours to tenderize the meat. If you cook longer it will just be more tender so up to 8 hours is fine too!

This recipe was created on a day of making a few Whole30 freezer meals. It has held up great in the freezer and, as expected, comes in so handy on those busy days. All you need to do is have some riced cauliflower handy, maybe some cilantro for topping, and a simple green salad accompanies it perfectly.

Eating healthy just takes a bit of planning and having your ideas for throughout the week. Looking through various sources of recipes recently, I am continually reminded of how simple it can be to make a healthy meal. The trick is to plan ahead and have your ingredients on hand. That said, life does happen and some days just don’t go as we expect, and so that’s why we have some of these delicious ideas tucked away in the freezer! Add this one to your menu planning, double it up for the freezer, and you are a step ahead for next time!
