Citrus Ginger Scallops

Oh you are going to love where I got this recipe! Thank you COSTCO Connection magazine 😆! This isn’t the first recipe idea for me that was sparked by the COSTCO magazine, you just never know where a meal inspiration might come from!

I love scallops, especially at a restaurant where the cooks can prepare them perfectly, and of course when they are that good, it also means they are on the spendy side. This is what makes a scallop dinner the perfect dish to try at home. I have made a scallop meal a time or two throughout the years, sometimes successful, but also some not so good. One technique I learned was to definitely cook them hot and fast, but none of my attempts have come out as good as restaurant quality - until this recipe! It was easy and I felt like I was eating at a magnificent restaurant!

I purchased fresh scallops from a local market, this was a little more expensive than buying a package of frozen scallops, but I was in the mood for scallops “as good as the restaurant”, so I opted for the best.

This scallop dish is easy to make and does not take much time, just add a couple of vegetables on the side and you have a simple, tasty, and healthy dinner. Enjoy!

INSTRUCTIONS -

1½ lbs sea scallops
Sea salt, to taste
2 Tbsp avocado oil
1 orange, zested and juiced
1 lemon, juiced
1 Tbsp fresh ginger, grated
2 Tbsp butter or ghee
Fresh thyme, for garnish

Pat the scallops dry with a paper towel, and then sprinkle them with sea salt.

Heat the oil in a sauté pan over medium-high heat. When the oil is nearly smoking, place scallops in the pan. Sear scallops approximately 1½ to 2 minutes on each side until almost opaque throughout. Remove scallops to a plate.

Reduce the heat to medium and add the orange and lemon juice, orange zest, ginger and butter to the pan. Whisk the sauce in the pan until it’s simmering, then return the scallops to the pan and spoon the sauce over the scallops.

Plate the scallops, drizzle more sauce on top, and garnish with thyme.
