Sous Vide Chuck Roast

Oh the joy of having a Sous Vide cooker!! Did you know that you can purchase an inexpensive chuck roast and turn it into the texture and flavor of a savory prime rib?? Oh ya so good, and now that I have discovered this, I’m having a hard time not preparing this meal weekly!!

I purchased a Breville Joule Sous Vide a couple years ago, I chose this one because it came highly recommended, if you don’t already own one it is a worthy kitchen gadget to consider purchasing. There are less expensive machines that have fairly good ratings also, so shop around and find what suits you! The possibilities of Sous Vide cooking are endless - egg bites, perfectly cooked vegetables, tender steaks, and mouth watering roasts. There are so many other ideas, just ask Pinterest 😁, I have only begun to explore the many recipes to try!

The chuck roast is perfect for this method of cooking, it needs to be cooked low and slow in order for the connective tissue to break down, but once it does the result is a beautiful tender and juicy cut of beef that you can eat as is or use in other dishes. Anything you would put tender beef on - tacos, burritos, salads, pasta - make enough that you will have leftovers for all these dishes!

INGREDIENTS -

Chuck Roast, size of your choice, make sure you have a ziploc bag that it will fit into
3 Tbsp good quality butter
1 Tbsp minced rosemary
Salt and pepper
Additional seasonings if you choose, I like McCormick’s Steak seasoning and garlic powder on mine

Season the chuck roast with salt and pepper and your choice of seasonings. Place the roast in a sous vide cooking bag or a ziploc bag. Remove any extra air from the bag and seal tightly.

Sous vide at 138 degrees for about 24 hours. I have tried 135 degrees and 140 degrees, and have found the perfect point between medium rare and medium to be 138.

When the sous vide time is up, in a large heavy pan such as cast iron, melt the butter and add the rosemary. Bring the heat to medium high, the butter should be sizzling but not burning. Sear the roast on all sides in the rosemary butter.

Place the roast on a cutting board and allow it to rest for a few minutes.

Delicious! And easy!! Just add a simple potato and side salad and your meal is complete!
