Healthy Chocolate Chip Cookies

Healthy Chocolate Chip cookies? Really? Or maybe a better description would be “guilt-free”, but either way, these are a great replacement for cookie recipes using processed sugar. You can satisfy your own sweet tooth, or make a sweet treat for the littles in your house, and not have to worry so much about what you are giving them!

This recipe was adapted from a post by a little less toxic - thank you for sharing and keeping us all healthy!

INGREDIENTS -

2 2/3 cups blanched almond flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt
2 eggs
2 tsp pure vanilla
1/2 cup organic pure maple syrup
1/2 cup melted coconut oil
3/4 cup dark chocolate chips

In a bowl, whisk together the dry ingredients - almond flour, baking soda, cinnamon, and salt. In a separate bowl combine the eggs, vanilla, and maple syrup. Pour the liquid ingredients into the dry ingredients and mix together.

Add the melted coconut oil and the chocolate chips and stir to mix.

Preheat oven to 350 degrees. Place a liner of parchment paper onto a cookie sheet. Scoop out teaspoon size drops of cookie dough onto the cookie sheet. Bake at 350 for 13 minutes. Remove to a cooling rack and allow to cool. Store in an airtight container, and enjoy!
