Beet Dyed Deviled Eggs

Aren’t they so pretty!! This was a fun experiment, and very tasty too - I hope you have as much fun as I did making these!

As the Easter Egg season approaches I wanted to try something new that didn’t involve food coloring when coloring eggs. After researching a few different recipe ideas, this is what I ended up playing with, not your regular easter egg, but it is a good one! It was simple, healthy, and oh so pretty!

INGREDIENTS -

1 dozen eggs
1 can beets (whole or sliced, doesn’t matter because we just use the juice)
1 tablespoon apple cider vinegar
1 cup healthy mayonnaise
1 tablespoon dijon
1 teaspoon dill juice
salt and pepper
paprika to sprinkle on top

Prepare the hard boiled eggs using the method you prefer, I considered writing about this process but there are so many different ways and that is a whole nother blog post! But, I will quickly share with you my favorite method for hard boiled eggs and that is the instant pot, it is just so easy, and they come out perfect every time. It’s called 5-5-5, or 5 minutes pressure cook, 5 minutes pressure release, then 5 minutes in ice water and ta-da, the perfect hard boiled eggs.

INSTANT POT HARD BOILED EGGS -
5 minutes pressure cook
5 minutes natural release
5 minutes ice bath

Drain the juice off the can of beets into a medium size bowl and stir in the tablespoon of apple cider vinegar.

When the eggs are done, peel them and place in the beet juice, adding water to cover the eggs. Set bowl in the refrigerator, allowing them to sit in the brine for at least 2 hours and up to 8 hours, the longer in the brine, the brighter the color will be.

When the eggs are colored to your liking, gently slice in half and remove the yolk to a separate bowl. To the yolk add the mayonnaise, dijon, dill juice, salt and pepper and whisk together. For a fluffier filling you can stir in a little extra mayonnaise.

To fill the eggs you can be as fancy as you like, from simply spooning in the filling, to using a plastic bag with yoke mixture inside and an icing tip to decorate. Remember you eat with your eyes first! 😂 Sprinkle a little paprika over the eggs and serve . . . yum!

Day 2 - Cut up those beets, add arugula, goat cheese, and walnuts, spritz with a little olive oil, salt and pepper and enjoy! 😃
