Sweet & Salty Snack Mix

To my healthy foodie followers - LOOK AWAY! I am sharing something that I tasted and thought was wonderful, unique, and fun, but then after getting the recipe I realized it is made with ingredients I wouldn’t normally include in a recipe! Are you ready for this? I mean we are talking corn syrup!! 😳😳

After tasting this little snack I just had to know what was in it, there were flavors that were sweet and earthy and I could not name them. I was thankful the owner of the recipe shared it with me and I set out on the adventure of making it. The flavors I couldn’t quite identify were light karo syrup 😳, and furikake. Who ‘da thought?!

This recipe makes a HUGE batch, it is from a business that uses it for catering and other special events. It completely filled two large roasting trays for me, and I probably should have spread it out thinner over more than two roasting pans (which I don’t have 🤪). Feel free to cut the recipe in half, for me some of the ingredients I wouldn’t use again so might as well make the whole batch. After all, who wants to eat leftover bugles 🤣😋.

Hidden House Snack Mix - Makes about 20 pints – it’s a huge batch! This is perfect timing if you are looking for a snack to share during the holiday get togethers. This could also be placed in quart jars or decorative jars and shared as gifts.

Dry mix -
1 lb of assorted chex cereal
14.5 oz bag of bugles
3 cups of pretzel goldfish
3 cups of sesame sticks
3 cups raw pepitas

Liquid mix
3/4 lb butter
1 1/2 cups golden syrup or light karo syrup
3/4 cup vegetable oil
3/4 cup white sugar
3 Tablespoons soy sauce
1 Tablespoon salt

Seasoning
4 oz furikake seasoning

Mix together the dry mix ingredients, big bowls required!

Heat the liquid ingredients together and mix to dissolve the sugar and then cool a bit. Using a spatula, add to the dry mix and gently stir.

Sprinkle on the furikake and stir again. (The container of furikake I purchased was only about 2 oz and it still provided ample flavor).

Bake on 4 cookie sheets at 225 degrees for about 1 hour. Rotate the pans and stir every 20 minutes. After 1 hour remove the pans from oven and stir every 10 minutes until the mixture is completely cool.

Store in an airtight container for up to 1 month.
