Chicken Stir Fry

Such a simple idea, chicken and veggies, and a recipe that is one of my go to’s this time of year with all the extra garden vegetables on hand. So this isn’t a new fancy recipe with ingredients you have never heard of, but instead, just an idea to just get you through a busy weeknight. Sometimes finding the idea is the hardest part of preparing an easy healthy meal!

But yet this simple idea isn’t a tasteless or boring meal, it has just enough spice to add some zesty flavors to this already perfect marriage of food.

INGREDIENTS -

One package organic chicken, breast or thigh, cut into bite size pieces
1 cup onion, chopped
2 garlic cloves, minced, or 3/4 tsp garlic granules
1 red bell pepper, chopped
2 cups zucchini, diced (or more if it is plentiful for you! 😆)
*Add other vegetables if you have them, there aren’t any rules here!
1 tsp seasoning salt (Redmond’s brand is delicious)
1 tsp ginger, grated, or 1 tsp of powdered ginger
1 -2 Tbsp coconut aminos
2 Tbsp avocado oil
Salt & Pepper to taste

Cut and dice all of your ingredients so when the frying pan gets turned on you are ready to go. A beautiful thing about this meal is that everything can be cut up and prepared in advance.

Add the avocado oil to a large heavy pan and bring to medium heat. Add the onion and garlic, stirring frequently for 5 minutes until they soften and release their flavors. Then, something that I do a little bit different is add the remainder of spices at this point - the ginger and seasoning salt, or other favorites you may have. When they are added at this stage and browned in the oil, the flavors come through a little more toasty and flavorful.

Continue cooking together with the spices for about another 5 minutes and then start adding your vegetables in the order of how long they will take to cook. For my ingredient list, add the bell pepper and cook for about 5 minutes, then the zucchini for a few minutes followed by the chicken. Sprinkle the coconut aminos over the whole dish and stir in. Add salt and pepper to your liking and continue stirring, I love pepper so I can get a little bit carried away with that, thus - to your liking! 😄

When the chicken is cooked through your dish is ready! Simple, healthy, and full of flavor. Add a green salad and sweet potato, or your favorite side dishes, and the meal is complete.
