Lentil Bowl with Honey Mustard Tahini sauce

Oh joy, it’s in a bowl! If it is in a bowl - I am in love!

This recipe idea came from A Little Less Toxic - thank you! The sauce is perfect and could be used as a topping for anything you love in a bowl. Leftover day would be awesome in a bowl with this sauce on top!

First I must say that this is a wonderful plant based meal which includes lentils as your protein, and they just happen to make the perfect base for your bowl. Now that I have made this a few times, here are my favorite topping ideas to decorate your lentil bowl with a rainbow of colors -

  • stir fried or lightly steamed veggies

  • rice - red rice is pictured in the photo, but pick your color!

  • roasted sweet potatoes or carrots

  • greens - spinach, lettuce, cabbage

  • pumpkin seeds or sunflower seeds on top

  • you could include shredded chicken or fish (especially good way to use leftovers)

  • cilantro

  • avocado

But most importantly is that everything is smothered (yes, you will want to smother) in a wonderful honey mustard tahini.

INGREDIENTS -

1 cup lentils, soak overnight
Sliced and chopped vegetables that you want to include
Cilantro
Nuts for topping

HONEY MUSTARD TAHINI SAUCE -

1/2 cup organic tahini
1 tbsp dijon mustard
1 tbsp honey
zest and juice of one lemon
1 tsp salt
1/4-1/2 cup water

Cook the lentils in a large pan by covering them with an inch of water and a sprinkling of salt. Simmer for 20 minutes. This amount of lentils should make about 4 good sized bowls. Then prepare your other vegetables however you choose to cook them, and as much as you want, depending on how many bowls you are making and what your favorites are.

Whisk together the sauce ingredients, starting with about 1/4 cup water and then add water until you reach the desired consistency. Different brands of tahini vary in consistency so the amount of water you add will also vary.

Then it is bowl time. Layer with the lentils as your base, rice if you like, and then add your toppings and sauce. How easy is that?
