Sausage & Veggies Sheet Pan Meal

There are so many beautiful mouth watering pictures of meals using different combinations to make a “one sheet pan meal”. With several photos and ideas spinning in my head, I’ve been experimenting with this recipe idea.

One of my favorite things about this recipe is that the ingredients are ones you can easily have on hand. Being quarantined with limited shopping trips, pre-cooked packaged sausages have been a useful staple item to stock up in the refrigerator or freezer. With a little research, I found information for the healthier Whole30 and paleo varieties of these sausages. Aidell’s has always been a favorite of mine, but now I have discovered others also 🤗. I experimented with different sausages, and Sabatino’s Organic Basil & Cracked Black Pepper Smoked Chicken Sausage has won my prize! 🏆 This is readily available at Costco and I have seen it at other stores also. These sausages are made with Whole30 and Paleo real food ingredients.

For this meal, you simply start with the sausage, then add vegetables such as potatoes, broccoli, onion, brussels sprouts, and carrots, and you have yourself a dinner! That is the basic concept for a “one sheet pan meal”. I had made this a few times with various ingredients before I came across a recipe idea from Mary’s Whole Life (thank you!) that included a different seasoning to coat all of the sausage and vegetables with. The traditional way I would have prepared this would be to cover the ingredients with my usual olive oil, salt, and pepper for roasting vegetables. But now, adding this sauce really enhances the flavors of the sausage and vegetables, giving it an entirely new and delicious flavor.

So, now just pick your favorite sausage and vegetables, and sit back and enjoy this simple healthy meal!

INGREDIENTS -

Sausage, 4-6 links of your favorite, (try Sabatino’s Organic Basil & Cracked Pepper Chicken!)
4-6 small to medium potatoes, yellow, gold, or red for a creamy texture and best flavor, quartered
1 head broccoli, chopped into florets
2 cups brussels sprouts, quartered
(Those are the basic meat and vegetable ingredients, experiment with others!)
And now for the tastiest sauce ever -
1/2 cup olive oil
1/4 cup coconut aminos
2 Tbsp dijon mustard
1 Tbsp hot sauce, your favorite
2 cloves garlic, minced
1 tsp onion powder
1 tsp sea salt
1/4 tsp red pepper flakes, more or less depending on how spicy you like

Slice the sausage and vegetables, place the potatoes in one bowl, and the other vegetables and sausage into a separate bowl (the potatoes take a few minutes longer to cook so those will get placed in the oven first). Prepare the sauce by combining the remainder of the ingredients in a small bowl and whisk together well. Cover the potatoes with half of the sauce and pour the remaining sauce over the sausage and vegetables, stir both to coat everything well.

Preheat the oven to 400 degrees. Plan to use a large sheet pan, if you have a heavy duty pan for roasting, that would be the best to use. A thinner pan will work, just keep a close watch on it. And, if you want to make the clean up easy, lay parchment paper over the pan before adding your ingredients 😀. Place the potatoes on the sheet pan and roast at 400 degrees for 10 minutes. Remove from the oven, give the potatoes a stir, and then add the sausage and vegetables to the sheet pan and mix together well. Return to the oven for approximately 20 minutes, stirring a couple of times, it’s easy to overcook this so keep an eye on it.

A simple salad is really all you need to add to this, you already have your meat and potatoes! And leftovers? Well, it reminds me of a breakfast hash so just warm it up in a fry pan, nestle an egg in the middle to lightly steam, and you have your healthy breakfast. Enjoy!
