Whole30 Teriyaki Chicken

Chicken Teriyaki - oh so good! It’s appeal is a result of that perfect balance between sweet and salty, but, often the sweet part is created by ingredients that aren’t so good for us. A picture of a teriyaki chicken dish made my mouth water and, as I reviewed the ingredients, it sure seemed like with a couple of substitutions, this could be tasty but yet created with more whole food ingredients. So, off I go . . .

First time attempt was perfect, and quick because it was cooked in the instant pot. This recipe includes the instructions for cooking teriyaki chicken in the instant pot, but I’m sure it would be successful using the same sauce recipe in either the crock pot, or in a fry pan allowing the chicken to saute then simmer in the sauce to tenderize.

This is also quarantine cooking time, anyone else end up stocking up an abundance of boneless skinless organic chicken thighs? 😳 Well, thank you Costco, and if your freezer looks the same as mine, here is a delicious recipe to use up some of those chicken thighs.

INGREDIENTS -

1/4 cup coconut sugar (substitute for brown sugar)
3 Tbsp coconut aminos (substitute for soy sauce)
1/4 cup crushed pineapple
1 Tbsp minced fresh ginger
2 garlic cloves, minced
2 pounds boneless, skinless organic chicken thighs
Cauliflower rice and/or steamed vegetables for serving
Sliced green onion for garnish
Toasted sesame seeds for garnish

Add coconut sugar, coconut aminos, crushed pineapple, ginger and garlic to the instant pot and stir to combine. Add the chicken and gently stir to coat. Secure lid, close vent, and cook for 15 minutes on manual high.

When the cooking cycle is complete, quick release the steam and then remove the lid. Using the saute mode, simmer for 10 minutes, this will allow the sauce to reduce and thicken.

Serve over cauliflower rice and garnish with green onion and sesame seeds. This is such a good example of an easy, healthy, and inexpensive meal to keep your family healthy and strong during this time. So be encouraged, you can do this! Enjoy!
