Curry Chicken

This is a such a simple and tasty chicken marinade, the flavors that will have your family or guests saying - WOW! It is also a great recipe to add to your regular menu planning - buy your chicken in bulk, double the marinade ingredients, and prepare a couple extra servings to place in the freezer for one of those days.

The marinade can easily be made up in the morning, saving the dinner preparation time for making a couple of side vegetables. The chicken breast is sliced in half so the thinner portions quickly cook in the fry pan or oven. The marinade is a bit messy for the BBQ, but maybe with some foil under it you could add a little smokey flavor and cook on the BBQ!

 
 

Just add a pile of veggies and dinner is served!

INGREDIENTS -

2-4 chicken breasts
1 cup coconut milk
2 Tbsp olive oil
1 tsp curry powder
1/2 tsp tumeric
1/2 tsp hot sauce, optional
1 tsp minced garlic
salt & pepper on chicken

Slice the chicken breast longwise and salt and pepper each side. In a small bowl whisk together the marinade ingredients. Allow the chicken to soak in the marinade for at least an hour, or up to all day if you like.

Slicing the chicken breast longwise is one of my favorite cooking tips. For marinating, the ingredients penetrate through the chicken better, the cooking time is reduced, and the chicken seems to cook through more evenly. If you are cooking on the BBQ, it just takes a few minutes on each side! The portion size is a benefit also, it truly feels as though I have eaten an entire chicken breast when it’s actually only half, and that amount feels satisfying.

Just a few minutes on each side if you are pan frying, or cook in the oven at 350 for 20 minutes.

This is good example of how eating healthy can be simple but yet good. Baked chicken with a little oil, salt, and pepper is good, but why not add a little flare? It is easy to fall into a mindset that good recipes will have some unhealthy ingredients, but not true! Once you adjust to using fresh ingredients and fresh herbs, you will wonder why you didn’t leave out the processed food sooner!
