This recipe is perfect for one of those days, the ingredients all go in the crock pot in the morning, your house fills with the aroma of home cooking, and after your busy day, dinner is ready and delicious. This amount serves four, or two with some great leftovers. Oh ya, and if you want to prepare for your next one of those days, double the ingredients and put half in a gallon freezer bag, you will be glad you did! πŸ˜„

INGREDIENTS -

2 chicken breast, diced
2 cups chopped onion (approximately 1 medium)
1 1/2 cups chopped red or yellow bell pepper
1 cup chopped green chilies
2 Tbsp olive oil
14 oz can diced tomatoes, or 2 cups fresh tomatoes, diced
7 oz can tomato sauce
3 cloves minced garlic
1 Tbsp cumin
1 Tbsp chili powder
2 tsp oregano
1 tsp each salt and pepper
1 cup chicken stock

Place the chicken in the crock pot and stir in the olive oil, coating the chicken well. Place the remaining ingredients in the crock pot and cook on low for 6-8 hours, don’t you just love how easy this is?? If you are doubling the recipe to set aside a meal in the freezer, reserve the chicken stock to add when you place the meal in the crock pot.

This is a good and hearty soup, even your hungriest will be satisfied. And did you notice all the ingredients are real food? Eating healthy can be simple and taste wonderful at the same time πŸ˜ƒ

Garnish with olives, avocado, cilantro, and if you allow dairy, have some cheese and sour cream! Enjoy!!
