Roasted Delicata Squash

A side dish can’t get any more eye appealing or as effortless as this. Delicata squash fits its name, so dainty and pretty but yet full of flavor that will surprise you when it is simply roasted with olive oil, salt and pepper.

Delicata squash is bountiful in the stores right now, or perhaps even still in your garden if you are lucky enough. It is the season of squash and this one makes a great side dish for your Thanksgiving or Christmas dinner. Delicata squash is high in vitamin D and A, and full of fiber, at the same time accommodating many eating styles by being Gluten Free, Vegan, low calorie and low carb - but most important, it is delicious!

INGREDIENTS -

1-2 delicata squash, depending on how large and how hungry your group is πŸ˜„
2-3 Tbsp olive oil
Salt and pepper to taste

Preheat oven to 400 degrees.

The skin on a delicata squash is very thin and tasty so there is no need to peel it (another thing I like about this squash!) Wash the outside well, cut in half longwise, scoop out the seeds, and then slice into quarter inch half rounds. Coat the squash in olive oil and then sprinkle salt and pepper on both sides, as much or as little as you prefer. Roast in the oven for ten minutes and then flip them over, roasting for another ten minutes. How easy is that?
