Taco Topped Sweet Potatoes

Just when you thought you were running out of simple but healthy dinner ideas . . .

This dinner came about when I had some leftovers from a taco salad dinner, a few other odds and ends, and a couple of sweet potatoes to bake. So - why not? We know the taco toppings are good on salad, and regularly a great addition to a baked potato bar, so why not sweet potatoes? Yep, my instinct was right, it was delicious.

It’s just so easy! Taco salads are a go-to for me so it comes together without much effort or thought. If you aren’t that practiced at taco salads, here’s an ingredient list to ease your way into another recipe to add to your weeknight dinner ideas!

INGREDIENTS -

1 pound lean organic ground beef
2-4 large sweet potatoes, 1 per person
Salt & pepper to taste
1 Tbsp chili powder
1 tsp cumin
TOPPINGS - PICK YOUR FAVORITE -
Grated cheese
Salsa
Diced olives
Avocado
Sour cream

Scrub the sweet potatoes and place them in a preheated 350 degree oven, they will take approximately 45-55 minutes to cook through, depending on their size. They are done when you can easily poke into them with a fork.

While the sweet potatoes are baking, prepare the taco meat. Bring a heavy skillet to medium heat, then add the ground beef. With a spatula break up the meat, then continue to stir while it cooks. Sprinkle with salt and pepper to taste, along with adding the chili powder and cumin. Cook the ground beef until it is no longer pink and cooked throughout.

Prepare your toppings, this can also be done while the sweet potatoes and ground beef are cooking.

When the potatoes are done, slice them through once, then slice each half a couple of more times.

Add the ground beef to the potato and then load up on your favorite toppings. Simple and scrumptious!

Time Saver Tip - When you are doing meal planning, if there is a meal a day or two in advance of this meal that includes some roasting in the oven, go ahead and cook the sweet potatoes, one step will be already done!
