Chicken Stir Fry

I know, it’s just a chicken stir fry, who needs a recipe for that? Does it maybe sound a little boring? Like some people think meatloaf sounds boring? (Which by the way, meatloaf can be pretty darn tasty! πŸ˜›) Well yes, it is just a chicken stir fry, but this one has a little attitude with it, and it is still just as simple as always. For being such an easy meal to make, this dinner is amazingly delicious and healthy! Sounds like the perfect dinner to me!

I also love a meal where all the ingredients are items that would normally be on hand. Chicken breasts and thighs are always in the freezer, vegetables are always in the crisper drawer of the refrigerator, onion is always on hand . . . so if you need a last minute idea - here you go!

Chicken stir fry can be served on it’s own, or over a bed of quinoa, rice, or riced cauliflower. Should you be fortunate enough to have any leftovers πŸ˜›, serve it over a roasted sweet potato! Delicious!

INGREDIENTS -

1 1/2 (or so) pounds organic chicken thighs or breast, diced
1 organic red bell pepper, sliced
2 cups broccoli florets
1 1/2 cup diced sweet onion
2 tablespoons avocado oil
3 tablespoons coconut aminos
1 tsp sesame oil
1/2 tsp ground ginger
1 tsp Chinese 5 spice
1 tsp ground mustard
1 tsp ground turmeric
Quinoa, rice, or riced cauliflower for serving over
toasted sesame seeds, for topping

The secret is in the sauce!! In a small bowl, whisk together the coconut aminos, sesame oil, ginger, Chinese 5 spice, mustard, and turmeric.

Bring one tablespoon of avocado oil to medium high heat in a large heavy pan, cast iron is perfect for this dish!

Add the onion and stir frequently until the onion has softened and become slightly translucent, about 5-7 minutes. Add the second tablespoon of oil to the pan and then add in the broccoli, chicken, and red pepper. Continuously stir to cook evenly. After about 5 minutes stir in the spice mixture and continue stirring until well blended. The chicken and vegetables should be done after about another five minutes, depending on the size of your cut pieces.

When the chicken and veggies are done, the dish is ready to be served. Place your base of quinoa, rice, or riced cauliflower in your favorite bowl and top with the chicken stir fry. Sprinkle toasted sesame seeds on top for the garnish.
