Sous Vide Egg Bites

I doubt Starbucks was the first to introduce the Sous Vide egg bites, but they were my first initiation to this amazing breakfast item! The addition of a Sous Vide to my kitchen last year now gives me a reason to experiment at home with this recipe. And, I got lucky, they came out delicious the first time! That doesn’t always happen 🥴.

INGREDIENTS -

8 eggs
1/2 cup almond milk, or regular milk or cream
1/2 tsp salt and 1/4 tsp pepper
1 cup cooked ground breakfast sausage
1 cup grated gruyere cheese

These amounts made 6 - eight ounce jars. The 8 ounce jars are the perfect size for this recipe, and easy to pack for a breakfast on the go. Spray the jars with a non stick spray. Whip together the 8 eggs and 1/2 cup of almond milk, then add about 1/2 teaspoon of salt and 1/4 teaspoon of pepper. With those ratio’s the consistency is good and the texture was just what I was hoping for. The almond milk is a substitute for dairy, you could use whole milk or cream also.

Evenly distribute your ingredients into the jars, about a tablespoon or two, then add the egg mixture evenly divided also, to approximately 1 inch from the top. Hand tighten the lids and place the jars in your sous vide container. Add water to 1 inch from the top of the jars. Sous Vide at 172 degrees for one hour.

This first batch came out great, next up will be bacon and cheddar, then oh so many possibilities -

  • Cheddar and green onion

  • For dairy free use an alternative cheese blend

  • Broccoli and red pepper

  • Canadian bacon and Swiss cheese

 

Ingredients prepped and ready to go . . .

 

One hour in the Sous Vide at 172 degrees.


Remove egg bites with canning jar lifters and place on a towel to cool and dry. Eat them up or store in the refrigerator for a quick and easy meal throughout the week. Enjoy your breakfast!!
