Emergency Dinner - the need for something quick, easy and nutritional after a crazy busy day!

You know those days - - last minute schedule changes, the dinner plan you had made but no time to go to the store, and then comes the desire to just get dinner at that drive-thru down the road 😳. But - here is an idea to keep on hand for one of those days.

Thank you to a fellow blogger, A Little Less Toxic, who posted the idea about these ramen noodles being an easy meal to keep on hand. Fortunately I was able to find these noodles at my local market, but have also since discovered they are available through Thrive Market and on Amazon. They are gluten free, vegetarian, vegan, non-GMO, and sustainably farmed.

You could simply boil these noodles up, add the seasoning packet and be done. But ,with just a little more effort, you can create an even tastier ramen dish! Here you go -

INGREDIENTS -

1 package Lotus Foods Millet & Brown Rice Ramen, each package is 2 servings
1 cup grated carrot
1/2 cup thin sliced sweet onion
1 tsp fresh grated ginger
1 cup celery, diced
4 cups vegetable or chicken bone broth
1 tbsp fish sauce
1 tbsp coconut aminos
1/2 tsp garlic salt
1 cup frozen peas
eggs, 1 per serving
cilantro, chopped for topping
1 tbsp avocado oil

Heat the avocado oil to medium in a heavy dutch oven. Add the ginger, onion, carrot and celery and stir fry for about 5 minutes. Add the broth, Ramen noodles, fish sauce, coconut aminos, and garlic salt and simmer for 10 minutes. At this point I could not decide whether or not to add the spice packet included with the noodles, I had already added my own spices, so just wasn’t too sure. Compromise - I added half of the packet! It made the balance of seasonings just right!

While the noodles are simmering, bring a pot of water to a boil for the eggs. Cook the eggs for 4 minutes to have a slightly runny center, or 5 minutes will give you a firmer egg to place on top. Place the eggs in ice water to soak for a few minutes, then peel and slice in half.

After the noodles have simmered for about ten minutes add the frozen peas and continue warming on low for 5 minutes. To serve, place in individual bowls, top with the egg sliced in half, and sprinkle cilantro on top.

So easy and delicious! Enjoy!
