Roasted Blue Hubbard Squash

This time of year you can find quite the variety of fall squash.  If you haven't tried Blue Hubbard Squash, put this on your menu planning and you are in for a treat!  If you are a butternut squash fan, this is going to be a close rival for your favorite.

This variety of squash has a distinctive nutty and buttery flavor, adding a little zest to your plate.  It is colorful, and a little more hearty than your usual winter squash varieties.  

Here's the trick - cutting it open.  A little time spent with my friend google and I discovered I wasn't the only one having some trouble with this!  It is a super hard shell!  Several ideas were tossed around, I decided on the "hatchet" method and landed on success.  If you don't have a hatchet, check out some other ideas online!

No matter how you choose to cut or break open your blue hubbard squash, you are going to have a boatload of squash.  You will need to have those freezer containers ready!

Once your blue hubbard squash is opened up, it is roasted just as your other squash or vegetables.  Leave the chunks meat side up, rub with olive oil, sprinkle with salt and pepper and place in a preheated oven at 400 degrees.  Depending on the thickness of the meat on the squash, roast for 30-45 minutes, checking occasionally with a fork to determine when the meat is tender.  

Once roasting is complete, allow the squash to cool until it is easy to handle.  Scrape the meat from the skin and place in a large bowl.  Using a hand mixer, mash the squash.  Add 1-2 Tbsp of ghee, salt and pepper to taste, and approximately 2 Tbsp of coconut milk to add to the creaminess of the texture.  Blend on low speed just enough to combine the ingredients and make the texture smooth.  There's actually enough you may need to mash the squash in batches so be prepared for that!

This makes a bunch!  Place the extra squash in freezer containers, it saves well for several months.  You will have a side dish that is ready to go for an excellent compliment to any meal.  This is perfect when meal planning for one of those days, unthaw your blue hubbard squash, throw some chicken on the grill, toss a simple green salad, and your gourmet style, simple and healthy meal is ready.
