Beef Pot Roast (Instant Pot)

The instant pot is a new addition to my kitchen and I’ve been anxious to try everything. Being a fan of easy time saving recipes, cooking a Pot Roast in the instant pot sounded good, and definitely intrigued me. Pot roast in one hour? Really? If you have tried my dutch oven Mom’s Pot Roast, it’s hard to imagine being similar to that in only one hour!

This was absolutely a success! Comparing it to the dutch oven cooking method, I’d have to say the old fashioned way has just a slight edge on the instant pot, but it is a very close call. And no comparison at all if you have time constraints and want to put that perfect meal on the table in a shorter period of time. You can’t always be home all day to watch the oven!

Salt and pepper both sides of the roast, then add any other of your favorite seasonings. In Saute mode sear both sides. Then change to cooking mode and cook for 50 minutes. Quick release the steam. Add potatoes, carrots and onion and cook for 10 more minutes.
