Whole30 Breakfast Burrito

My first experiment with this Whole30 breakfast burrito idea was on Christmas morning, I know, it’s a risky time to try something new, but it was a success!

With an event such as Christmas morning, or anytime you have overnight company, timing can be everything for serving breakfast. Who wants to be working at the stove while the others are having coffee, relaxing, and chatting away? I got up early, allowing extra time to prepare this, it only took about 30 minutes to assemble and that time was well worth how easy it made serving breakfast later. When it was time to eat, the burritos came out of the refrigerator, the pan was placed under the broiler for 10 minutes, and they were done. Meanwhile, I’m having coffee and chatting 😄

You could vary the ingredients for this recipe, there are so many options that come to mind - be creative!

INGREDIENTS:

12 thin slices of ham
8 eggs, whisked for scrambling
Handful of baby spinach
2 cups diced tomato
1 Tbs avocado oil or ghee

In a large fry pan, heat the oil or ghee to medium high. Add the eggs and stir as you would to make scrambled eggs. When the eggs are almost done, add the spinach and tomato, continuing to stir. Basically you are making a “scramble”, so just use your favorite ingredients! If you are following a Keto eating plan, add some cheese! Want some spice - add some hot sauce!

In a 9 x 13 baking dish add a little oil or oil spray to prevent sticking. Place a spoonful or so of the scramble onto a ham slice and roll it up, burrito style. Fill the baking dish with the ham rolls, cover, and place in the refrigerator until it is time to cook. When you are ready to serve, preheat the oven to broil, place the breakfast burritos on the top rack of the oven and cook for about 10 minutes, just until they are turning brown.

Serve with fruit slices and you have a gourmet breakfast!
