2 cans chicken (I love the Kirkland brand from COSTCO!)
1/2 cup chopped or slivered almonds, toasted
1/2 cup dried cranberries
1 cup chopped pineapple
1/2 cup green onion or chives
1/2 cup Whole30 mayonnaise (Homemade is best!)
Salt & pepper to taste
1/4 tsp dill

Many years ago I had a scrumptious chicken salad sandwich at a local lunch restaurant.  After a little dissecting of the ingredients, this recipe was born and has since been a regular menu item, especially for picnics and camping trips!  The pineapple, craisins, and crunchy toasted almonds are the secret ingredients.  

 Fast forward several years and now eating a paleo style diet, the recipe has been modified to a little healthier version.  I still love the canned chicken from Kirkland tho!  You know the theory that if canned is good, then fresh would be better? Well, I tried it and it just didn't work with these ingredients. I know that sounds crazy, but the fresh roasted chicken wasn’t the same!  Dried cranberries without sugar can be found in the bulk section at a healthier type food store, and homemade mayonnaise eliminates more sugar and preservatives.  Mayonnaise tip - If you don't feel like making your own, try Chosen Foods avocado oil mayo.  It took several attempts of sampling different Whole30 mayonnaise varieties purchased from the store and I honestly didn't find one I liked.  But then Chosen Foods avocado oil mayo won my vote, and it's nice to have around when you don't feel like making it from scratch.

You won’t need the bread anymore, this is perfect on a lettuce wrap, served as a spread on vegetables such as sliced cucumber rounds, and a bowl and a spoon work perfectly too 😉
