Quinoa Caprese Salad

What to do with all those garden fresh tomatoes? Here's an idea!  If you like the "Caprese" flavors, you will love this combination.  The addition of quinoa makes this salad a hearty one, and the crunch from including the nuts is a real treat!  This recipe has so many tomatoes in it, well of course that was the goal, to use all the tomatoes!  So think of this as more of a "Tomato" salad with a little Quinoa in it 

I've been hooked on Quinoa this summer, and have learned several combinations to make a tasty salad.  It's easy to utilize whatever ingredients you have on hand, quinoa providing a good source of fiber and protein, and the veggies and nuts filling in some needed nutrition for the day.  There's so many ideas for dressings using oil, fresh juices, and herbs!

SALAD INGREDIENTS -
2 cups cooked quinoa
Fresh garden tomatoes, cut in bite size
1 cup sliced olives
1 cup torn basil leaves
1 cup cubed fresh mozzerella
1/2 cup sunflower seeds
1/2 cup chopped walnuts

DRESSING -
1/4 cup light olive oil
3 Tbsp balsamic vinegar
1/2 tsp salt
1/2 tsp pepper

Combine the salad ingredients together.  Whisk the olive oil, balsamic, salt and pepper in small bowl and then blend the dressing into the salad ingredients.
