Breakfast Non-Sandwich

What's a non-sandwich? Well, I did make that up, but the definition of sandwich is "two or more slices of bread with a layer (of something) in between".  So my definition of "non-sandwich" would be "NO two or more slices of bread, just the layer in between"!  Remember the old Oreo commercial? The kid will eat the middle of an Oreo first....kinda same idea. So let's make the middle! 

1-2 tsp avocado oil in fry pan
1 egg
Half avocado sliced
2 slices ham
Sliced tomato

Heat the oil in a fry pan to medium heat.  Place the egg into pan and break open the yolk. Using a spatula, push in the sides so it is somewhat round shaped. Salt and pepper to taste. After 2 minutes flip the egg over with the spatula and place ham slices on top. Turn off the heat and leave egg in hot pan for another 2 minutes, this will allow it to cook through. While you are waiting, place the avocado and tomato slices on top of your egg "non-sandwich". After a 2 minutes the egg should be cooked through. Remove from the pan, and decorate your plate so you feel special!

My favorite avocado oil to use for these simple stir fry recipes is Chosen Foods pure avocado oil.  It's flavor is great and a healthy oil to include in your cooking.  In my area it is available at COSTCO, or simple to order through Amazon.

It can be challenging to find ideas for breakfast when you are attempting to eat gluten free, grain free, or paleo.  Coffee just demands the flavors of breads, bagels, muffins and toast!  But know that your taste buds and cravings can change, and this simple and healthy breakfast is a good start to exploring new breakfast ideas.

So now I ask you, who needs bread? A knife and fork will easily serve up this yummy breakfast "non-sandwich"! Enjoy!
